New Nosh Village Food Truck Rolling Onto SWM Culinary Scene

A summertime experimentation in collaboration has turned out the newest restaurant on wheels in Michigan’s Great Southwest and you can call it Nosh Village. It officially arrives on the scene soon, with a projected debut at the St. Joe Winter Beer Fest.

The new food truck is “defined by world taste influences and unique umami flavors.” Nosh Village emerged from an in-house collaboration between Watermark Brewing Company and Chef Ryan Carragher. Over the course of the summer of 2017, Carragher worked closely with the Stevensville brewery for weekly pop-up noshing. The new Nosh Village food truck will offer an extension of the popular evening events, hosting regular hours at Watermark Brewing as well as additional area events.

Chef Ryan Carragher is a coastal Maine native, where he became invested in Pacific Rim flavors when cooking in a traditional Japanese izakaya. Nosh Village’s menu will draw from his experiences there, showcasing courses like traditional ramen, steam buns, and sushi, in addition to items that fuse those flavors with food-truck favorites.

Carragher says, “I’m excited to introduce a new experience to the area. Food is an experience. It should evoke emotion, but at the end of the day, it’s gotta taste good.”

The crew at Watermark Brewing says, “Running a restaurant was never something we set out to do when we were in the planning stages of Watermark. We are passionate about brewing beer and Ryan of Nosh is equally as, if not more, passionate about making really unique and flavorful food.”

Nosh Village will serve on Wednesday and Friday evenings at Watermark Brewing, and brunch on Sundays. Currently in the final days of construction, the food truck is scheduled to serve at the St. Joe Winter Beer Fest before beginning regular service on February 28th at Watermark Brewing.
